It’s Election Day! 
This is NOT a Political Message

How are you feeling?  Truly.  I am so very thankful it is election day.  This has been an unsettling year with politics, pandemic and weather.

I vote for YOU!!  To feel awesome!
Let’s explore some ways we can THRIVE when we feel overwhelmed and anxious.

1.  Take a breath – I know you’ve heard me say that often.  Take 3 deep slow breaths and notice how your nervous system calms.
2.  Go to a yoga class or tune into an online yoga session.  
3.  Count your blessings – focusing on gratitude takes your mind off anxiety.
4.  Get outside for a walk.  If you are in a warm climate, walk barefoot in the sand or grass for a deeper connection and grounding.
5.  Talk to a loved one who lifts your mood and has a positive attitude.  Share your thoughts and feelings and then listen to the other person’s thoughts and feelings.  
6.  Allow yourself a moment to feel and digest what is going on that is overwhelming.  Face it, and let it go.
7.  Eat an apple – 🍎  yes, you read that correctly.  Apples have many health benefits Including emotional support.  
Apples bring us back to the beginning and a feeling of connection.  They can help boost your energy and lighten your spirit, giving you hope.
8.  Have faith and hope!  You will have a feeling of peace and calm.

 Apple and Beet Juice

1 beet, peeled
1 cup kale
2 apples
Juice of 1 lemon


Apple Chia Smoothie

Serves 1
1 apple, cored and chopped
1 cup plain dairy-free yogurt
1 cup filtered water
1 teaspoon sunflower seed butter
1 teaspoon chia seeds
1 scoop NeoLife vanilla protein powder
Add all the ingredients to a blender. Blend until smooth. Serve immediately.


Warm Apples with Coconut Cream

Serves 4
4 apples
½ cup raisins
½ cup pumpkin seeds
2 tablespoons maple syrup or honey
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
1-inch piece of ginger, grated
Pinch of sea salt
2 teaspoons coconut oil
½ cup water

2 5-ounce cans coconut cream (unsweetened), chilled
Preheat the oven to 375 degrees F. Remove the core of the apples without poking a hole through the bottom.
Next, mix the raisins, pumpkin seeds, maple syrup, cinnamon, vanilla, ginger, and sea salt in a small bowl. Stuff into the apples.
Reserve the leftover mixture as extra topping.
Place the stuffed apples onto a baking sheet.
Drizzle each stuffed apple with coconut oil.
Splash the water on top of the stuffing.

Bake for about 45 minutes and check every 10 minutes to ensure the topping isn’t burning.

Serve topped with coconut cream.
