Broccoli Carrot Tahini Soup

Serves 4
 
1 tablespoon coconut oil
1 onion, chopped
2 garlic cloves, chopped
1 teaspoon dried oregano
1 teaspoon cumin powder
zest of 1 lemon
4 cups broccoli florets
1 cup chopped carrot
1 32-ounce package vegetable broth
¼ cup tahini
juice of 1 lemon
sea salt and black pepper to taste
 
SAUTÉ INGREDIENTS. Add coconut oil to a large soup pot over medium heat. Once the oil has melted, add onion and garlic. Sauté for about 3 minutes, then season with oregano, cumin powder, and lemon zest. Stir well.

SIMMER SOUP. Add broccoli, carrot, and vegetable broth. Mix and cover. Simmer for about 15 minutes.

COMBINE TAHINI SAUCE. While soup is simmering, mix tahini, lemon juice, sea salt, and black pepper in a small bowl. When soup is done simmering, add the tahini sauce to the pot and mix well. Turn off the flame and serve.

OPTIONAL – BLEND SOUP. If you would like your soup to be smooth, use an immersion blender or blend in a high-speed blender before serving.
